I live here in Thailand, and for almost two years. Many of my friends in America ask me more questions as: what to do and where should I stay. Let me see if I can help a bit. "After thinking about this, I'm likely to need more than one post. So here is the first one.
Centers would pretty much everything when you are alone or with family. There are some places in Thailand, where almost no one wants to take yourthe family. I would suggest that Pattaya is not a place to care for your family. Pattaya is almost but not quite, a single refuge. A lot of entertainment for adult audiences, go-go bar that is, with topless dancers sometimes nude, and a plethora of prostitutes. "Although the government of Thailand said there is not a prostitute." :-) I have a word said here that there are families on holiday in Pattaya. There are some entertainment for the family here, sailing, fishing, surfing, parasailing,etc., but overall it is largely adult audience.
I would recommend that the family is the best area, Phuket, Chiang Mai and Bangkok. These pages are geared more for the family. As with the hotels. If Google tips about hotels, hotel is more or less see end sector. Try googleing "cheap hotels". It is my opinion the Suhkumvit of Bangkok has more reasonable hotel rates, and it is easy to to bypass the part of thethe city. Especially in the vicinity of where Nana and Asoke. These two areas have easy access to the skytrain and subway overhead. There are a lot of shopping there, together with restaurants and Internet cafes. There are too many tourists in this area, but sometimes it's a good thing, because there is virtually no crime in this area, attacked the police frown on tourists in Thailand, and here we speak English quite well.
As for Chiang Maiin question, try to find a great hotel in the city center near the central square. It is close to everything, shops, night market, pubs, restaurants, tour guides, etc.
I'm not as familiar with Phuket, but we recommend you close to the beaches in Phuket Central.
The weather here in Thailand is always nice, if not always a bit "hot, even though the season, you can get a bit cool in the evening. Wear light clothing. Walking shorts, short T-shirts,comfortable walking shoes. You will probably not run much, so bring your favorite, comfortable shoes. Bring a light sweater or jacket for a few nights. Do not worry about getting enough, you can do whatever you want here, that goes with toiletries found. Not to pack, you can use soap, shampoo, toothpaste, toothbrushes, razors, umbrellas, in fact, almost everything. So do not over pack. There are libraries in Suhkumvit abundance, so you can find all the cardsand travel guides.
